Hi all! For those of you who recently read my review of Do or Diner , I included a picture of a Wacky Cake because I’d never heard of one before and took an interest in it after reading about it in the book.
So I attempted it Wednesday night and wanted to share my results with all of you. Ready?
One dish with all ingredients mixed together in it….
2 2/3 cups flour, 2 cups sugar, 2/3 cups cocoa, 1 tsp. salt, 2 tsp. baking soda, 2 tsp. vanilla, 2/3 cup vegetable oil, 2 tsp vinegar, 2 cups water
Add dry ingredients to ungreased baking dish or pan. Make three wells in the dry mixture and put the vanilla in the first well, vinegar in the second well, and oil in the third well. Pour two cups of water over everything and mix with a fork until incorporated.
Bake on 350° for at least 40 minutes (mine took longer, but since ovens vary, look at the cake after 40 minutes).

It’s rather decadent by itself so I decided not to frost it. I just sprinkled a little confectioners sugar on top. I love that deep brown color from the cocoa (I used Hershey’s).
So there you have it. It’s rich, moist and delicious. In fact, I’m having trouble keeping myself away from it. 🤦🏽♀️ Seriously folks, you should definitely try it. No eggs, butter or milk, and perfectly respectable results. We loved it!

The dressing even satisfied my sweet tooth and I didn’t crave dessert like usual. This will be a staple for me. This is gorgeous, and sounds delicious!

OMG, chocolate is my number one weakness, too. If I don’t have company or someone to bring it to, I’d be in danger of eating that entire cake in one sitting.

I’ve never met a piece of chocolate I didn’t like. I’m truly ashamed of how much of that cake I ate. 😔

I just tried the recipe and it is delicious! It’s super moist with just the right amount of chocolaty goodness. I added vegan chocolate chips and made a quick vegan vanilla frosting. This will definitely be my go to when I need a quick chocolate fix. Thanks!

It looks like you did an awesome job. I have to laugh at the oven statement because in Mexico ovens frequently are used for storing dishes, not baking. Once I started trying to bake, I could see why. In the first two places we lived, the ovens had two settings. ON which was a low-medium and OFF. Where we are now, there are actually Centigrade markings and they work well enough that my scientist husband was able to conduct experiments and graph what heat you actually get at which markings. You have to allow a long time for preheating. I have yet to see an over with a broiler. That said, we are very happy with our current oven.
Your wacky cake looks delicious and very chocolatey. With your original description, I was thinking rationing of ingredients. I know at times sugar was hard to come by. Upon reading the recipe, however, I decided maybe it was a matter of refrigerated storage. Butter, eggs, and milk. I can think of lots of times in our history when these fresh items might not have been available. Again, potential research question.

The cake is moist, chocolatey and DELICIOUS! I really need to give the rest away because I keep eating it. 🤦🏽♀️ I have a serious weakness when it comes to chocolate. I used to work for Hershey Chocolate years back.
I need to do more research about it. I find the whole thing quite interesting.
